Tasty chicken nuggets

I thought I would pass along another recipe my sister had me try out. It is home made chicken nuggets and not only are they addicting, but they aren't full of all kinds of animal parts and what not like the ones at McDonalds. I made them about two weeks ago and Chris loved them, and we have had them about three times since. (I know, I need to try more recipes so we don't eat the same things all the time)

7 weeks and growing!

Here are some of the latest pictures of Landon. He is getting SO big! He is sleeping through the night now and smiling all the time, we love it! We were amazed to find that he is the biggest baby in our ward his age, but he is happy and healthy and that is what matters.

Guilt-free frosty..shake thing!

If you read this, you have to PROMISE me that you will try this tasty treat! My sister shared this easy recipe with me and Chris and I have made one every night since. (okay, let's be honest here, we made it twice last night. I guess when if you make it 5 times a day it defeats the purpose of it being low in calories) It takes about 3 minutes to make and the best part is that it is only like 30 calories! You need one small package of sugar free, fat free, Jello pudding mix. ( it doesnt have to be fat free, but the fat free kind is only 25 calories, and the regular is like 180 calories) You can use any flavor, we had the cookies and cream kind last night and tonight we tried the banana cream flavor and it has been my favorite so far. You will also need the light whipped cream that comes in a tub, stick in the freezer so that it sets up. I have just been keeping it in my freezer so that I will always have some frozen when I need it. (Which will probably be every day from the looks of it.)

So this is all it takes:

1 small pudding mix in any flavor you desire
1 cup skim milk
1 tray of ice cubes
1 scoop of frozen cool whip

Mix in the blender until it's all smooth, serve, and enjoy!

Note: be sure to serve it right away, if you leave it sitting the pudding will start to set up and it ruins the consistency.

Hooray for the Snugli!

For those of you who do not own a snugli, go to the store right now and buy one. If you don't have a baby yet, carry your dog around in it or something, it's bound to work for it too. We were given two different ones as gifts (one regular one, and one JEEP brand one that looks really manly, Chris was pretty happy about that) Well, Landon has these "fussy episodes" like clockwork from about 6:00-7:30 every day. That just so happens to be right around the time that I am trying to make dinner, and Chris is trying to work but Landon insists on being held, otherwise he screams. Since Chris is in the office doing call reviews and such, we can't have him screaming in the background, so Chris decided to bust out the snugli one evening. HALLELUJAH!! Landon loves it! In fact, I think he likes being in it more

than being held because he has yet to fuss or cry when he has been in it. Chris just straps in on every day and sits at his desk and carries on with work as usual, giving me some free hands to make dinner and clean up around the house a little bit. Most times he ends up falling asleep, in that case we turn him around in it so he can sleep against Chris's chest. Right this very moment, Chris is wearing the snugli with Landon just chillin' in it while he plays playstation. (talk about quality time right there)

Mom was right....AGAIN.

I can remember many, many times my mom telling me, "Just wait 'til you have kids" or " When you are a parent you will understand." And you know what mom, YOU'RE RIGHT! As I am sure many of you mom's out there can relate to, I find myself standing over Landon's crib listening to make sure he is breathing. Or waking out of a dead sleep in the middle of the night by the tiniest little grunting sound. (When he was first born, I seemed to think that holding him through the entire night was a guaranteed prevention from SIDS.) I find myself eyeing questionable looking strangers who even look in my baby's direction and always have this fear that if I turn my back I could turn back around and Landon could be gone, or someone might be breathing on him or touching him with dirty hands or something. Anyway, you get the point. I just never knew that PARANOIA was part of being a mom! And now looking back on all the times I was late for curfew, or didn't leave a note telling my mom where I was, or left the house with some crazy looking friend that my parents had never met...I am actually quite surprised that my mom didn't deck herself out in camoflauge gear, follow me everywhere and hide in the bushes with binoculars watching my every move! I now understand what it is to worry. And as Landon gets older and I am not worrying about SIDS anymore, I am more than certain that worry will be turned to "Don't fall off your bike!" or "Who is that boy with green hair that you have been hanging around with??!"
So... I think I owe my Mom a sorry and a huge THANKS for being a mom that worried about me. And who knows, for all I know, maybe she did follow me everywhere and hide in the bushes with binoculars. You know that's where I am going to be in about 16 years!

We'll leave the dryer to the laundry...

Nights have been pretty rough the last few weeks, once Landon wakes up to eat, he is up and has no interest in being put back down or falling asleep. Chris finally broke down one night and put Landon in his carrier and was about to go for a drive in the middle of the night, but instead decided to turn on the dryer and put his carrier on top of it. He fell asleep INSTANTLY, and he slept for over 4 hours! It was a relief, however, we both knew that it wasn't something we could make a habit of, or else Landon would be sleeping on top of the dryer until he is 3. I could just see us ending up on some afternoon talk show about bad parenting as Dr. Phil zooms in on a picture of a dryer... then points out the toddler sound asleep on top of it. So, needless to say we aren't sticking to the whole "dryer" routine, and after last night we just might not need to! I put Landon down at 10:30 and he slept until 3:40... I figured it was just lucky and prepared for an hour struggle trying to get him to sleep again. To my astonishment, he went right back to sleep and didn't wake up again until 7:45!! HOORAY!! A full nights sleep! (or as close as I am going to get to one for a long time) It was a great night.

Landon, let's do it again tonight buddy!!

Two week appointment

Landon had his two week appointment last week and he is already getting big! He weighed 9lbs 1oz and he is 21 inches long. We sometimes wish he would just stay little forever, but we are excited to watch him grow and see what kind of personality he has as he gets older... as long as he learns to sleep through the night, I will be one happy camper!

Holy cow, we had a baby!!

We did it! After 9 months of planning and anticipating we actually have a baby! Regardless of the fact that I felt that I may be the first woman in history to get pregnant but never actually deliver her baby... one week late and 24 hours after being induced our amazing little boy, Landon peeked his cute, cone shaped head into the world! And man what a cutie he is! He was a healthy 8lbs 6oz and 20.5 inches long and yes, to our disbelief he has hair!! For those of you who didn't get the whole story I will sum it up for you... Landon was due March 3rd, but certainly wasn't in any mood to come then, so I went in to be induced on March 8th at 8:00pm. 24 hours later after a long, really long night, and an even longer day he was born at exactly 8:00pm on March 9th. His heartbeat was a little irregular in the womb so they had a monitor stuck to his head to monitor his heart rate, and me on oxygen in order to make sure that he was getting enough oxygen. When he delivered he had low blood sugar, a fever, and they were giving him more oxygen as well. They let me see him for what seemed like a milli-second and then they had to wisk him away to the nursery for some blood tests. They told me as soon as my epidural wore off (and I could walk) that I could go and see him in the nursery. So despite having no sleep for 24 hours I couldn't sleep because I was sitting up waiting to get the feeling back in my legs. It felt like Christmas Eve. Finally around 2:30am I was able to go and see him and they let me keep him in my room for about an hour. He was wide awake and it was amazing to just sit and stare at him, I could have stared at him all night.Anyway, all his tests came back fine, his fever went down, and the three of us came home from the hospital a new little family.

Welcome to our blog...

Considering that Chris won't even get online to post pictures on myfamily.com (he makes me do it) is probably a good indication that you won't see too many posts on here from him. Nevertheless, I will try to keep this updated for the BOTH of us, even if it means typing while he dictates. As you have probably gathered already, we decided to hop on the band wagon of bloggers after seeing Lindsay's and also Aimee's. I figure we have enough people living out of state that we don't keep nearly enough contact with, so hopefully this will spread all the little details of our fun life across the country a little faster. So keep in touch everyone, especially with all the babies coming into the world! Chris and I have been dying to compare photos to see if they look like cousins!
